Coconut Bread


We all need bread in our lives. Sure, I can do gluten free, but sometimes I just need something stodgy. This coconut bread is a great bread alternative – gluten, dairy and sugar free, made with coconut flour, which gives it a slightly cakey texture, so it probably best works with sweeter toppings, or perfectly with a nut butter (cashew is my fave).


  • 6 eggs
  • 100g coconut oil or butter
  • 100g coconut or almond milk
  • 100g coconut flour
  • 1 1/2 tsp of gluten free baking powder
  • Pinch of salt


  1. Preheat the oven to 180ºC and grease a loaf tin
  2. Beat the eggs and milk in a jug
  3. Mix the flour, baking powder and pinch of salt in a bowl and create a ‘well’ in the middle
  4. Slowly pour the wet ingredients into the well and stir into the dry
  5. Once combined, you should have a fluffy, sticky, formed mixture – pour into the greased loaf tin and smooth down
  6. Bake for 40 minutes

Toasted with cashew nut butter, nothing short of a delight
