Super Healthy Banana Bread

Gluten free sugar free banana bread. This ticks every health box.

Ideal for using up old bananas. Everyone has their own too-ripe-threshold. Mine’s quite extreme, they have to be brown and squidgy to be deemed inedible, at this point I’ll throw them into this mix to make a gluten and refined sugar free bread, that’s also delicious. If you want to go all out and make it dairy free as well, you can simply replace the butter for coconut oil.

Ingredients:

  • 4 ripe bananas
  • 4 eggs
  • 4 tbsp butter (or coconut oil)
  • 140g nut butter (your choice, walnut works well)
  • 80g coconut flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla essence
  • pinch of salt

Method:

  1. Preheat the oven to 180 degrees and grease a standard loaf tin
  2. Blend (I just use a hand blender for ease) the bananas, eggs, butter and nut butter
  3. Stir in the coconut flour, baking powder, cinnamon, vanilla and salt
  4. Bake in the oven for 55mins until browned and springy
  5. I like to eat warm with nut butter spread 🙂
