Crab and Butternut Squash Linguine

Spiralized butternut squash with crab

So it turns out that butternut squash makes a great alternative to pasta (who knew?). I’ve spiralized to make butternut squash linguine (or noodles) and combined with crab meat for a delicious and filling paleo ‘pasta’ dish.

Serves 1

Ingredients: 

  • Half a butternut squash
  • 1 tbsp olive oil
  • 1 inch piece of ginger (or 1 tsp ground)
  • 1 inch piece of turmeric (or 1 tsp ground)
  • 1-2 garlic cloves (your preference, dependent upon personal garlic threshold – I’ve been known to hit 3 cloves when feeling outlandish)
  • 170g tin of white crab meat
  • 1/2 a lemon
  • 1 tsp paprika
  • Handful of spinach (optional)

Method:

  1. Peel and spiralise the butternut squash using a spiraliser (or purchase pre-spiralised, available at major supermarkets but not mentioning any names)
  2. Heat the olive oil and grate in the ginger, turmeric and garlic – cook for a few mins on a medium heat until starting to brown
  3. Add the butternut squash spirals and cook for 5 mins, until softened
  4. Stir in the spinach, if opted for
  5. Remove from the heat, add the drained crab meat
  6. Squeeze in the lemon and sprinkle the paprika
  7. Mix well and enjoy thoroughly
