Quinoa Porridge with Almond Milk

Quinoa – a complete protein containing all eight of the essential amino acids, gluten-free and easy to digest. Do I need to expand on why we should eat more of this ‘supercrop’ (United Nations words, not mine)? No, didn’t think so. Instead I’ll just go straight in with how to make this easy quinoa porridge recipe. The nutty flavour of the quinoa combined with the coconut, cacao and cinnamon makes it super tasty.

Makes 1 portion

Ingredients:

  • Half a 250g packet of ready to eat Quinoa (or the ‘do it yourself’ stuff if that’s your preference)
  • 100ml almond milk
  • 1 inch x 1cm piece of creamed coconut
  • 1 tsp ground cinnamon
  • 1 tsp cocoa powder
  • 1 tbsp raw cacao nibs

Method:

  1. Mix the quinoa, almond milk and creamed coconut together in a microwaveable container or a saucepan
  2. If microwaving – cook on medium power for 3-4 mins, stirring every minute, until you get a thick porridge texture
  3. If cooking on the stove – cook on medium/high heat for 3-4 minutes until a thick porridge texture is reached
  4. Remove from heat and stir in the cinnamon, cocoa powder and half the cacao nibs
  5. Sprinkle the rest of the nibs on top
  6. Enjoy your deliciously healthy quinoa breakfast bowl
