Garlic Prawns, Chorizo and Sweet Potato Medley

Garlic Prawns with Chorizo

I’ve dubbed this a ‘medley’, which is basically throwing together all of the best ingredients you can find and supplementing  with delicious flavours. I’ve gone for king prawns, chorizo, sweet potato and spinach with a garlicy-gingery drizzle. Super quick to prepare AND high in turmeric, ginger, garlic and olive oil = anti-inflammatory taste sensation.

Ingredients:

Serves 1

  • 150g cooked king prawns
  • 100g chorizo sausage
  • 1 small or half a large sweet potato
  • 2 large handfuls of fresh spinach
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 inch fresh ginger (or 1 tsp ground)
  • 1 inch fresh turmeric (or 1 tsp ground)
  • 1 tsp smoked paprika
  • 1/2 tsp chilli flakes (optional)
  • Juice of 1/2 a lemon

Method:

  1. Skin the sweet potato and heat in the microwave for 5 mins until edibly soft
  2. Whilst its cooking, heat the oil in a saucepan or wok on a medium heat and grate in the garlic, ginger and turmeric, cook for 2 minutes until softened
  3. Add the chorizo and cook for another 5 minutes, until browned
  4. Add the King prawns, squeeze in the lemon juice and sprinkle on the paprika and chilli flakes, heat on the pan for another couple of minutes
  5. Stir in the spinach
  6. Place the sweet potato on a plate and pile on the mixture
  7. Revel in the oily goodness
