Baked Salmon with Lemon Garlic Spinach and Red Cabbage

This is a super quick and easy healthy dinner, using possibly the most underrated ingredient for health today; red cabbage. Its high in vitamin C, can help reduce inflammation in the gastro system and that’s just the start.. Team it with an oily fish like salmon and green vege (in this case, spinach) and you’re laughing on both the healthy and delicious fronts ☺️

Serves 1

Ingredients:

  • Salmon fillet
  • Sprinkle of smoked paprika
  • Three handfuls of fresh spinach
  • 2 tbsp pickled red cabbage
  • 2 cloves of garlic
  • A knob of butter
  • Half a lemon
  • Pinch of salt and pepper

Method: 

  1. Place the salmon in a preheated oven at 180 degrees, bake for 20 mins
  2. Melt the butter on a medium heat in a saucepan and add the garlic
  3. Once the garlic is browned, add the spinach and stir until wilted
  4. Place the red cabbage (grated fresh or pickled from a jar) onto a plate and top with the spinach mix
  5. Squeeze the lemon juice all over and season with salt and pepper
  6. Place the baked salmon on top of the pile and sprinkle over the paprika
  7. Hey presto – enjoy
